Beef Tallow

For thousands of years, Ayurvedic texts described animal fats as sacred, medicinal and essential. Ghee was — and still is — revered as the purest of all cooking fats. Tallow, the fat of the cow, was understood by ancient Indian civilisation to be deeply nourishing, not feared.

Then the 20th century arrived. Industrialised seed oils needed a market. Animal fat became the enemy. The science was weak, the lobbying was not, and an entire culture was slowly convinced to abandon what its ancestors had understood for millennia — that ghee, butter and tallow are optimal nutrition.

That was the 1960s. The rates of heart disease, obesity, diabetes and metabolic illness have climbed steadily ever since.

Beef tallow is rendered suet — the fat surrounding the organs of a cow, the most nutrient-dense fat depot in the animal. Ours comes from grass-fed Indian cattle, raised locally in Karnataka and rendered slowly and purified and deodorized with only sea salt and filtered water.

What makes it extraordinary is also what made it feared.

Saturated fat. The kind your cell membranes are literally made from. Every cell in your body requires saturated and monounsaturated fat to maintain structural integrity — to hold its shape, regulate what passes in and out, and communicate with neighbouring cells. This is not ideology. This is basic cell biology.

Seed oils cannot do this job. Polyunsaturated fats — the primary fat in canola, sunflower, soybean and corn oil — are chemically unstable. They oxidise under heat, producing aldehydes and free radicals that damage cells, promote inflammation and disrupt hormonal signalling. While cooking with seed oils, they degrade into something your body does not recognise and cannot process cleanly - transfats.

Tallow does not oxidise. It does not smoke at normal cooking temperatures. It does not break down when it hits a hot pan. It carries fat-soluble vitamins A, D, E and K in forms your body can absorb. It has been part of the human diet for as long as humans have been alive.

Cook everything in it. Your eggs. Your meat. Use it as a base for sauces.
This is not a trend. This is a return to what ancestors already knew.
