They were wrong. You noticed. You just didn’t know what you were tasting.
This is fresh garlic, egg whites, and good oil. Made by hand, the way it has always been made in the small trattorias and home kitchens of southern Europe where nobody ever questioned whether fat was the enemy.

No canola. No sunflower. No soybean. No emulsifiers, stabilisers or ingredients you need a chemistry degree to pronounce.
