Choosing Your Fuel: Welcome to the Larder 30-Day Keto Challenge

Tomorrow, July 1st, we kick off the Larder 30-Day Keto Challenge. Whether you are here to quiet your cravings, heal your gut, drop persistent inflammation, or simply see what happens when you stop running on sugar, we are incredibly excited to do this with you.

At its absolute baseline, a ketogenic diet is simple: it is a way of eating that shifts your body from burning glucose (sugar) to burning ketone bodies (fat).

But here is the catch: you can achieve ketosis on Diet Coke and commercial hot dogs.

There is a massive spectrum of how to approach low-carb eating. Where you choose to land on this spectrum depends entirely on your health goals, your current energy levels, and how deep you want to take your healing.

To help you map out your journey, we’ve laid out the entire spectrum—from the entry-level basics to the deep therapeutic protocols—so you can choose the path that fits you best.

The Low-Carb Spectrum: Choose Your Path

The baseline rule for anyone joining us for the next 30 days is simple: track what you eat (at least initially) and keep your total net carbohydrates under 25 grams per day.

How you fill those macros is up to you. Here are the paths you can take:

1. Classic Keto

  • The Premise: Anything goes, as long as it fits your daily carb budget.
  • The Reality: While it successfully shifts your metabolism to burning fat, it doesn't pay close attention to ingredient quality. You can technically hit your goals here while still consuming heavily processed foods and artificial sweeteners.

2. Whole Foods / Whole30 Keto

  • The Premise: Ketosis, but make it clean.
  • The Reality: You stay under 25g of carbs, but you eliminate the chemicals, artificial preservatives, and industrial processing. You are focusing on whole, recognizable ingredients.

3. Ketovore

  • The Premise: You recognize that fat is the prize, but animal fats are vastly superior to plant-based alternatives.
  • The Reality: You remain in deep ketosis, but the vast majority (or all) of your fat and protein comes from animal sources rather than seed oils or heavy amounts of nuts and avocados.

4. Dirty Carnivore

  • The Premise: Eliminating plant defense chemicals to heal digestion.
  • The Reality: Often chosen by those dealing with gut dysbiosis, bloating, or IBS. Plants use toxic defense chemicals to protect themselves; by cutting out most plant matter, your gut finally gets a break. On this path, you primarily eat meat, eggs, and dairy, using only low-carb condiments, low-calorie seasonings, herbs, and spices for flavor.

5. Strict Carnivore

  • The Premise: Total elimination of plant matter to combat systemic issues.
  • The Reality: If you are dealing with chronic low energy, brain fog, or persistent body rashes like psoriasis and eczema, this is your reset button. You eliminate all plants completely, consuming only meat, seafood, eggs, and butter.

6. The Lion Diet

  • The Premise: The ultimate, ultimate elimination protocol.
  • The Reality: You consume exclusively beef, salt, and water. It sounds incredibly restrictive because it is—but this deep therapeutic framework has been used globally to help reverse severe autoimmune and chronic conditions, from Rheumatoid Arthritis and Hashimoto’s to profound neurological issues.

How to Set Yourself Up for Success

No matter where you choose to position yourself on this spectrum for the next 30 days, the primary goal is exactly the same: switching your body's fuel source from sugar to premium fat to achieve true metabolic health.
