Chimichurri came out of the Argentine pampas, where gauchos cooked meat over open fire and needed nothing more than herbs, oil, vinegar, and heat to finish it. No sauce thickened with flour. No sweetness to balance anything. Just a sharp, grassy, deeply savoury condiment that made already good meat better.
This is parsley, oregano, red chilli, garlic, scallion, thyme, white wine vinegar, and extra virgin olive oil. Made fresh, in small batches, with no seed oils, no sugar, and nothing that needs a preservative to hold it together.
The flavour is bright and herbaceous up front, with a clean vinegar sharpness and a slow warmth from the chilli at the finish. It does not taste like anything bottled. It tastes like it was just made.
Use it as a marinade for any fatty cut of meat before grilling or pan-searing. Spoon it over a steak, a lamb chop, or a whole roasted chicken straight from the pan. Stir it through scrambled eggs. Use it as a dipping sauce alongside carnivore crust. Add a spoonful to bone broth for depth. Put it on anything that deserves good oil and fresh herbs.
