Traditional BBQ sauce has a problem. Every commercial version on the Indian market — without exception — is built on a base of refined sugar, glucose syrup, modified starch, and seed oils. The flavour profile is real; the ingredient list is not something a metabolically conscious person can work with.
This is a BBQ sauce rebuilt from first principles. The base is cold-emulsified olive oil and Dijon mustard — the mustard’s natural mucilage doing the structural work that egg or starch would do in a conventional emulsion, and holding stable at pizza oven temperatures without breaking. Tomato paste provides body and natural pectin. Apple cider vinegar and Worcestershire carry the tang and umami depth. A measured quantity of molasses — 2.2% of the total batch — delivers the dark, slightly bitter complexity that defines the BBQ flavour register without meaningfully moving the carbohydrate needle. Monk fruit handles residual sweetness without glycaemic impact.
The result is smoky, tangy, savoury, and lightly sweet. At 1.2g net carbs per tablespoon, it does not threaten ketosis. Net carbs here are calculated as total carbohydrates minus dietary fibre — the fraction that actually drives insulin response. The remaining carbohydrate is structural, not metabolic.
No seed oils. No refined sugar. No thickeners. No preservatives. Non-veg from the tiny bit of anchovies for umami. Refrigerate and use within 90 days.
