Lemon Aioli

Real mayonnaise and its high-fat cousin, aioli died sometime in the 1970s when factories discovered they could make it cheaper with seed oils and nobody would notice.

They were wrong. You noticed. You just didn’t know what you were tasting.
This is garlic, egg, lemon and good oil. Made by hand, the way it has always been made in the small trattorias and home kitchens of southern Europe where nobody ever questioned whether fat was the enemy.

No canola. No sunflower. No soybean. No emulsifiers, stabilisers or ingredients you need a chemistry degree to pronounce.

Just aioli. Proper aioli. The kind that makes everything it touches taste better.
